Hey peeps, I wanted to bake some christmas cookies but in a more healthy version. They turned out very yummy and are perfect for a little homemade christmas present for your grandparents. So here is what I tried.
The recipe is very easy and you need a preparing time of 30 minutes.
Ingredients (for ~35 cookies):
- 150 g dark chocolate
- 150 g soft butter (or for a vegan version: vegetable margarine)
- Each 50 g brown & white sugar
- 1 pinch of salt
- 1 package vanilla sugar
- 1 egg, size M (or for a vegan version: noEgg)
- 225 g flour
- 115 g coarse oat flakes
- 3 to 6 tbsp of different nuts without skin (I used almonds, walnuts and hazelnuts)
First you go on and line two baking sheets with baking paper. Also preheat the oven to 200 °C.
Now chop the chocolate and the nuts. Put the butter in a mixing bowl and mix it with the sugar, salt and vanilla sugar and beat it till it’s smooth. Stir in the egg first and then the flour. Add the oats, the chopped chocolate as well the nuts and fold gently. Now your batter is ready to form the cookies. Use two teaspoons to set little heaps of batter on the baking sheets. Press down the batter a little bit to get more flat cookies. Bake the cookies in the hot oven for about 12 minutes. Remove from the oven and let them cool down on a cake rack.
Now you have your own easy but healthy christmas cookies. You also can leave out the nuts or could use coconut flakes or lighter chokolate.
Also you can powder a bit of icing sugar on the cookies and they will look like they were snowed in for a nice presentation on a comfy sunday afternoon. Enjoy with a hot drink.
I will bake some cookies again just one or two days before it’s christmas and will give them to my grandparents as a present. The really don’t need anything and they are happy to get some yummy cookies made by myself. Always a good idea and perfect as a last minute present if you have no other ones.
